Born and raised in Osaka, Japan, Koji Kobayashi is professional trained in 'kaiseki', the highest form of Japanese Dining, or also known as Japanese Fine Dining. After working in at some of Osaka's most illustrious restaurants including Kagairou, he became Sous Chef at Nagomi An Kitahama, a fine-dining resturant known for its seasonally influenced 10-course tasting menus. Now residing in Calgary, Chef Kobayashi brings his finely honed skills and passion for seasonality to Calgary's Sukiyaki House.

ABOUT yuki koyama

Born and raised in Iida, Japan, Yuki Koyama began his journey with a passion for professional baseball, taking him and his studies to the United States. When that did not work out, he found home in Calgary and a love for Japanese cuisine, specifically nigiri-sushi. During his time at Ki and Shokunin, Yuki learned the traditional way of preparing sushi but with a modern and upscale influence. As he reaches a decade in the industry, you can notice how he incorporates his past experiences to perfect his own art on sushi.
